Chocolate Macadamia Buttons
This is basically candy- and who doesn't love candy?!- but without all the sugar.
1 bar (4oz) unsweetened baking chocolate
1/2 c coconut oil
Melt on low in small saucepan
2 T heavy cream (sub equal amount almond milk for DF)
1/4 c unsweetened almond milk
1 t alcohol free vanilla extract
1 T (blueberry blossom raw) honey (optional)
Stir gently until well incorporated.
Spray mini ice cube tray with coconut oil spray. Fill each compartment with one macadamia nut. Fill each with chocolate mixture to the top.
Sprinkle with good quality sea salt (don't omit!)
Freeze until hard (about 1 hour), then pop out of the ice cube trays. Store in the fridge.
