Vanilla Spice Keto Chia "Oatmeal"
One of the things I miss while on the Ketogenic diet is oatmeal. This is what I do instead, and it nourishes my body and keeps me in Ketosis. Win win!
Keto Chia "Oatmeal"
In a small saucepan, warm up:
2 cups unsweetened vanilla almond milk (or milk of choice)
1 T coconut oil
2 T chia seeds
1/2 T beef gelatin powder (doesn't taste like anything at all, and SO healthy!)
1/2 T flax seeds (whole or ground)
1/2 T psyllium husks (optional)
1/2 t alcohol free vanilla extract
1/4 t maple flavoring
1/4 t cinnamon
Pinch of sea salt to taste
Sweetener of choice, optional
Bring back up to a low simmer.
Blend with immersion blender (watch your fingers!) for about 30 seconds (or blend in a blender, but be careful because it's hot!)
Taste and adjust seasonings.
This makes 1 serving (or you can eat half and save the rest for later!)
