Nothing is simpler than some quick scrambled eggs for a satisfying Keto meal. The beauty of this is how easily you can change it to fit your mood!
1 T coconut oil (or butter)
2 oz Jones Natural Sausage (or bacon, pastrami, ham...you get the idea)
2 oz mushrooms (roughly a handful)
1/2 c greens (spinach, chard...whatever you have on hand)
1-3 pinches sea salt, to taste
Heat the coconut oil in the pan, and brown the meat and mushrooms. Add in the greens until wilted. Meanwhile, beat the eggs with the salt and pepper. Add eggs to pan, stirring constantly until cooked desired amount.
Sprinkle with cheese if you want!
